Organic Pinot Gris grapes were harvested and de-stemmed by hand before being crushed by foot and macerated for 5 days. Fermentation with indigenous yeast in stainless steel. Aged for 1 year before bottling. No fining or filtration. Very small amount of sulphur added on bottling.
Natural skin contact wine from Sophie Evans second vintage of her own vines. A shorter maceration time results in lighter, more mineral driven style compared to the first vintage. Just 240 bottles produced
Sophie Evans worked with 2Naturkinder in Germany and made her own wines using some of the grapes from those vineyards but also with biodynamic fruit purchased from other growers in the area. She has now moved back to the UK and has her own vines down in Kent. 2022 was the first vintage from these plots of Pinot Noir, Pinot Gris, Reichensteiner and Bacchus. It's been amazing to watch Sophie's journey so far and we can't wait to see what comes next.
